Description

This recipe makes a light meal for warm days. You cook chicken with squash and lemon in your crockpot.


Ingredients

  • 1.5 pounds boneless skinless chicken breasts
  • 2 sliced zucchinis
  • 1 sliced yellow squash
  • 3 minced garlic cloves
  • 0.5 cup chicken broth
  • 1 sliced lemon
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions

  1. Place chicken breasts in the bottom of your crockpot.
  2. Pour chicken broth over the meat.
  3. Sprinkle garlic, oregano, salt, and pepper on the chicken.
  4. Layer zucchini and yellow squash slices over the meat.
  5. Place lemon slices on top of the vegetables.
  6. Cover and cook on low for 4 hours.
  7. Serve the chicken and vegetables with the cooking liquid.

Notes

  • Use fresh vegetables for good results.
  • Add the squash halfway through the cook time for firmer texture.
