Description
This recipe makes a light meal for warm days. You cook chicken with squash and lemon in your crockpot.

- 1.5 pounds boneless skinless chicken breasts
- 2 sliced zucchinis
- 1 sliced yellow squash
- 3 minced garlic cloves
- 0.5 cup chicken broth
- 1 sliced lemon
- 1 teaspoon dried oregano
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Place chicken breasts in the bottom of your crockpot.
- Pour chicken broth over the meat.
- Sprinkle garlic, oregano, salt, and pepper on the chicken.
- Layer zucchini and yellow squash slices over the meat.
- Place lemon slices on top of the vegetables.
- Cover and cook on low for 4 hours.
- Serve the chicken and vegetables with the cooking liquid.
Notes
- Use fresh vegetables for good results.
- Add the squash halfway through the cook time for firmer texture.
- Store leftovers in your refrigerator for up to three days.
