- 2 cups cold cucumber, sliced (about 1 medium cucumber)
- 1 cup fresh spinach leaves, packed
- 1/2 cup fresh mint leaves
- 1/2 cup fresh lemon juice (about 2 lemons)
- 1 tablespoon honey or maple syrup (optional)
- 4 cups cold sparkling water or still water
- Ice cubes, as needed
- Fresh mint sprig or cucumber slice for garnish (optional)
Instructions
- Prep the veggies. Wash the cucumber, spinach, and mint thoroughly. Slice the cucumber into thin rounds for a better infusion.
- Blend the base. In a blender, combine the cucumber slices, spinach leaves, mint leaves, and lemon juice. Add a splash of water to help it blend smoothly. Pulse until the mixture is mostly smooth but still has a bit of texture.
- Strain (optional). If you prefer a clearer drink, pour the blended mixture through a fine mesh sieve or cheesecloth into a pitcher, pressing gently to extract the liquid.
- Add sweetness. Stir in honey or maple syrup if you like a touch of natural sweetness. Mix until dissolved.
- Combine with sparkling water. Pour the sparkling or still water into the pitcher, stirring gently to combine. Add ice cubes to chill.
- Serve. Ladle the drink into glasses, garnish with a mint sprig or cucumber slice if desired, and enjoy immediately.
Notes
- Use cold water and ice to keep the drink crisp.
- For a stronger mint flavor, add a few extra mint leaves.
- If you prefer a sweeter drink, increase the honey or maple syrup to taste.
