Ingredients

  • 2 chicken breasts
  • 4 large potatoes
  • 1 cup shredded cheddar cheese
  • 4 minced garlic cloves
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Peel and chop potatoes into cubes.
  2. Boil potatoes in a pot of water until soft.
  3. Drain the water and mash potatoes with butter and cheese.
  4. Season chicken breasts with salt and pepper.
  5. Heat oil in a pan over medium heat.
  6. Cook chicken until the center is no longer pink.
  7. Remove chicken from the pan.
  8. Add garlic to the same pan and cook for one minute.
  9. Pour in chicken broth and cream.
  10. Simmer the sauce until it thickens.
  11. Place chicken on potatoes and pour gravy on top.
