Description

Ingredients

  • 1 can chickpeas
  • 2 bell peppers
  • 1 zucchini
  • 1 red onion
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 2 cups cooked quinoa
  • 3 tablespoons tahini
  • 1 tablespoon lemon juice
  • 1 garlic clove

Instructions

  1. Heat your oven to 400 degrees.
  2. Place your vegetables and chickpeas on a pan.
  3. Add your oil and spices.
  4. Toss your ingredients to coat.
  5. Roast your vegetables for 25 minutes.
  6. Mix your tahini and lemon juice.
  7. Place your quinoa in bowls.
  8. Add your vegetables on top.
  9. Pour your dressing over the bowls.
