  • For the frosting:
    • 1  cup (225 g) cream cheese, softened
    • ¼ cup (60 g) unsalted butter, softened
    • 2  cups (240 g) powdered sugar, sifted
    • 2  tbsp coconut cream
    • 1  tsp lime juice
    • ½ tsp vanilla extract

Instructions

  1. Preheat & prep: Set oven to 350°F (175°C). Grease a 9‑inch square baking pan and line the bottom with parchment paper for easy removal.
  2. Dry mix: In a medium bowl whisk together flour, baking powder, and salt. Set aside.
  3. Cream butter and sugar: Using a handheld mixer, beat the softened butter and granulated sugar on medium speed until pale and fluffy, about 3‑4 minutes.
  4. Add eggs & vanilla: Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Combine liquids: In a small cup, mix milk, coconut milk, pineapple juice, and lime zest.
  6. Mix wet and dry: Add the dry flour mixture to the butter‑egg mixture in three additions, alternating with the liquid mixture. Start and end with the flour. Mix just until incorporated; over‑mixing will make the cake dense.
  7. Bake: Pour batter into the prepared pan, smoothing the top with a spatula. Bake for 25‑30 minutes, or until a toothpick inserted in the center comes out clean. The cake should be golden and spring back lightly.
  8. Cool: Allow the cake to cool in the pan for 10 minutes, then lift it out using the parchment and transfer to a wire rack. Cool completely before frosting.
