Instructions
- Prepare the cake. Preheat oven to 350°F (175°C). Mix the cake batter according to the package directions, adding water, oil, and eggs. Pour into a greased 8‑inch pan and bake for 25–30 minutes. Let it cool completely on a wire rack.
- Crush the cake. Once cooled, break the cake into fine crumbs using a fork or a food processor. Transfer to a large bowl.
- Add chocolate chips. Stir in the chocolate chips until evenly distributed.
- Mix the filling. In a separate bowl, whisk powdered sugar, milk, and vanilla until smooth. Pour over the cake crumbs and mix until the mixture holds together when pressed.
- Shape the pops. Pinch about 1‑inch balls of the mixture and insert a popsicle stick into each. Place on a parchment‑lined tray and chill in the fridge for 20 minutes to firm.
- Melt the coating. Melt the candy melts in a microwave or double boiler, stirring every 30 seconds until smooth.
- Coat the pops. Dip each chilled cake pop into the melted coating, tapping off excess. Immediately roll in sprinkles or nuts if desired.
- Set and serve. Return the coated pops to the parchment tray and let the chocolate harden at room temperature. Once set, they’re ready to serve or gift.
