- 1 lb ground beef
- 1/2 cup grated parmesan cheese
- 1 egg
- 2 garlic cloves minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup sun-dried tomatoes chopped
- 2 cups fresh spinach
Instructions
- Mix beef, parmesan, egg, garlic, oregano, salt, and pepper in a bowl.
- Form the mixture into 12 meatballs.
- Heat oil in your skillet over medium heat.
- Brown meatballs for 8 minutes.
- Remove meatballs from the pan.
- Pour cream and broth into the same skillet.
- Add sun-dried tomatoes to the liquid.
- Simmer sauce for 5 minutes.
- Add spinach and stir until it wilts.
- Return meatballs to the pan and coat with sauce.
Notes
- Use ground turkey instead of beef.
- Keep leftovers in your fridge for 3 days.
- Serve with zucchini noodles.
