Ingredients

  • 1 lb ground beef
  • 1/2 cup grated parmesan cheese
  • 1 egg
  • 2 garlic cloves minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes chopped
  • 2 cups fresh spinach

Instructions

  1. Mix beef, parmesan, egg, garlic, oregano, salt, and pepper in a bowl.
  2. Form the mixture into 12 meatballs.
  3. Heat oil in your skillet over medium heat.
  4. Brown meatballs for 8 minutes.
  5. Remove meatballs from the pan.
  6. Pour cream and broth into the same skillet.
  7. Add sun-dried tomatoes to the liquid.
  8. Simmer sauce for 5 minutes.
  9. Add spinach and stir until it wilts.
  10. Return meatballs to the pan and coat with sauce.
