- 1 cup white rice
- 2 cups frozen corn
- 2 tablespoons mayonnaise
- 2 tablespoons sour cream
- 1 lime juiced

- 0.25 cup cotija cheese
- 2 tablespoons cilantro
- 1 tablespoon olive oil
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Cook the rice per the package directions
- Heat olive oil in a skillet over medium heat
- Add chicken to the skillet and cook until browned
- Add corn to the skillet and cook for five minutes
- Mix mayonnaise sour cream lime juice and chili powder in a bowl
- Combine the sauce with the chicken and corn
- Place rice in four bowls
- Top the rice with the chicken mixture
- Garnish with cheese and cilantro

- Use canned corn if you lack frozen corn
