- 5 Chicken Thighs (boneless skinless)
- 1 cup Long Grain White Rice (uncooked)
- 1 can Cream of Mushroom Soup
- 1.5 cups Chicken Broth
- 1 packet Onion Soup Mix
- 1/2 cup Unsalted Butter (1 stick)
- 1 tsp Garlic Powder
Instructions
- Preheat oven to 375°F. Grease a 9×13 baking dish.
- Spread uncooked rice in the bottom of the dish.
- Whisk broth and cream soup together; pour over rice.
- Place chicken thighs on top of the rice.
- Sprinkle with onion soup mix and garlic powder.
- Slice butter into pats and place on top of chicken and rice.
- Cover with foil and bake for 45 minutes. Remove foil and bake 15 more minutes.
- Rest for 5 minutes, fluff rice, and serve.
Notes
- Rice: Use regular long-grain rice, not instant rice.
- Sodium: Use low-sodium broth and unsalted butter to control saltiness.
- Resting: Letting it sit for 5 minutes helps the rice absorb the remaining buttery liquid.
