A delightful treat made from buttery shortbread and filled with fruit preserves.
Ingredients

- 2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup fruit preserves (raspberry or apricot)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, powdered sugar, and salt.
- Add softened butter and vanilla extract. Mix until a dough forms.
- Chill the dough for 30 minutes.
- Roll out the dough and cut into shapes.
- Cut out centers in half of the cookies.
- Place on a baking sheet and bake for 10-12 minutes.
- Let cool and spread preserves on solid cookies.
- Top with the cookies that have cutouts.
Notes
- Store in an airtight container.
- Use your favorite fruit preserves.
- Dust with powdered sugar before serving.
