Ingredients

  • 1 pound chicken breast diced
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1 can black beans rinsed
  • 1 cup frozen corn
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • 1 tablespoon olive oil
  • 2 tablespoons taco seasoning

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken to the pan and cook until brown.
  3. Stir in the rice and taco seasoning.
  4. Add chicken broth, black beans, corn, and salsa to the skillet.
  5. Bring the liquid to a boil.
  6. Turn heat to low and cover the pan with a lid.
  7. Cook for 20 minutes until rice is tender.
  8. Remove from heat and sprinkle cheese over the rice.
  9. Cover for 2 minutes to melt the cheese.

Notes

  • Use mild salsa if you prefer less spice.
  • Rinse the black beans to remove extra salt.
