Description

- 1 pound chicken breast diced
- 1 cup long grain white rice
- 2 cups chicken broth
- 1 can black beans rinsed
- 1 cup frozen corn
- 1 cup salsa
- 2 cups shredded cheddar cheese
- 1 tablespoon olive oil
- 2 tablespoons taco seasoning
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chicken to the pan and cook until brown.
- Stir in the rice and taco seasoning.
- Add chicken broth, black beans, corn, and salsa to the skillet.
- Bring the liquid to a boil.
- Turn heat to low and cover the pan with a lid.
- Cook for 20 minutes until rice is tender.
- Remove from heat and sprinkle cheese over the rice.
- Cover for 2 minutes to melt the cheese.
Notes
- Use mild salsa if you prefer less spice.
- Rinse the black beans to remove extra salt.
- Store leftovers in your refrigerator for three days.
