Description

These soft pretzel bites have a golden crust and a chewy center. You finish them with melted butter and coarse salt.


Ingredients

  • 1.5 cups warm water
  • 1 tablespoon sugar
  • 2 teaspoons kosher salt
  • 1 package active dry yeast
  • 4.5 cups all-purpose flour
  • 2 ounces melted butter
  • 10 cups water
  • 0.66 cup baking soda
  • 1 large egg yolk
  • Coarse sea salt

Instructions

  1. Combine warm water, sugar, and salt in a bowl.
  2. Sprinkle yeast on top and wait 5 minutes.
  3. Add flour and melted butter to the mixture.
  4. Knead the dough until smooth.
  5. Cover and let the dough rise for 50 minutes.
  6. Preheat your oven to 450 degrees Fahrenheit.
  7. Boil 10 cups of water with baking soda.
  8. Cut dough into small pieces.
  9. Drop pieces into boiling water for 30 seconds.
  10. Place bites on a baking sheet and brush with egg yolk.
  11. Bake for 12 minutes until golden brown.

Notes

  • Use warm water between 110 and 115 degrees.
  • Do not crowd the boiling water.
  • Serve with mustard or cheese dip.
