- 3 lbs Chicken Thighs
- 1 cup Pineapple Juice
- 1/2 cup Soy Sauce
- 1/2 cup Brown Sugar
- 1/3 cup Ketchup
- 1 tbsp Ginger (grated)
- 4 cloves Garlic
- 1 tsp Sesame Oil
Instructions
- Whisk pineapple juice, soy sauce, sugar, ketchup, and aromatics. Reserve 1 cup.
- Marinate chicken in the remaining sauce for 3 hours.
- Preheat grill to medium-high.
- Grill chicken 6 minutes per side.
- Brush generously with reserved glaze in the last few minutes of cooking until charred and sticky.
- Garnish with green onions and serve.
Notes
- Pineapple Juice: Use canned juice, not fresh, to prevent the chicken from becoming mushy.
- Cooking Method: Can be baked at 400°F for 25 minutes, then broiled with the glaze.
