Description

A hearty, budget-friendly stew made with ground beef, potatoes, carrots, and a rich tomato-beef broth. Also known as Poor Man’s Stew.

Ingredients

Scale
  • 1.5 lbs Ground Beef
  • 3 Russet Potatoes
  • 3 Carrots
  • 1 Onion
  • 4 cups Beef Broth
  • 1 can Tomato Sauce
  • 1 cup Frozen Peas

Instructions

  1. Brown ground beef and onions; drain fat.
  2. Add carrots, celery, and seasonings.
  3. Add broth, tomato sauce, and potatoes. Simmer 20 mins.
  4. Add peas/corn and simmer 5 mins.
  5. Thicken with cornstarch if desired.

Notes

  • Meat: Use lean ground beef (90/10) to avoid a greasy broth.
  • Potatoes: Russet potatoes work best for a thick, hearty texture.
  • Leftovers: Flavors improve the next day; store in the fridge for up to 4 days.
