- 1 lb Ground Beef (85/15)
- 1.5 lbs Yukon Gold Potatoes (diced)
- 1 Yellow Onion (diced)
- 1/2 cup Beef Broth
- 1.5 cups Cheddar Cheese (shredded)
- 2 tbsp Olive Oil
- 1 tbsp Worcestershire Sauce
- 3 cloves Garlic (minced)
- 1 tsp Paprika
- 1 tsp Dried Oregano
Instructions
- Brown ground beef in a large skillet over medium-high heat. Remove and set aside.
- Sauté onions in remaining fat for 3 minutes.
- Add diced potatoes and cook for 4 minutes.
- Add beef broth and Worcestershire sauce. Cover and simmer for 10-12 minutes until tender.
- Remove lid, add spices and garlic. Cook to evaporate liquid.
- Return beef to pan and stir.
- Top with cheese, cover, and melt. Serve hot.
Notes
- Potatoes: Yukon Gold are best as they don’t require peeling and hold their shape.
- Timing: Cut potatoes into uniform 1/2 inch cubes to ensure even cooking.
- Storage: Keeps well in the fridge for up to 4 days.
