- 1 lb Raw Shrimp (peeled, deveined, chopped)
- 1 cup Fresh Lime Juice
- 4 Roma Tomatoes (seeded, diced)
- 1 Cucumber (seeded, diced)
- 1/2 Red Onion (diced)
- 1/2 cup Cilantro (chopped)
- 1 Jalapeño (minced)
- 1 Avocado (cubed)
- Salt and Pepper
Instructions
- Chop raw shrimp into small pieces.
- Submerge shrimp in lime juice in a bowl. Refrigerate for 20-30 minutes until opaque.
- Meanwhile, dice tomatoes, cucumber, onion, and jalapeño.
- Add chopped vegetables and cilantro to the cured shrimp.
- Season with salt, pepper, and optional olive oil.
- Fold in avocado gently.
- Serve with tostadas or chips.

- Safety: Use high-quality frozen shrimp thawed for safety, or blanch boiling water for 1 minute if preferred.
- Texture: Seed the tomatoes and cucumbers to prevent a watery ceviche.
