Description

You make this one-pan meal by baking chicken and rice together. You top your dish with cool tzatziki sauce for a fresh taste.


Ingredients

  • 1 pound chicken breast, cubed
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup Greek yogurt
  • 1/2 cup grated cucumber
  • 1 tablespoon fresh dill, chopped

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Place your chicken, rice, broth, lemon juice, garlic, oregano, salt, and pepper in a baking dish.
  3. Stir your mixture to combine ingredients.
  4. Cover your dish tightly with foil.
  5. Bake your meal for 40 minutes or until rice is tender.
  6. Mix your yogurt, cucumber, and dill in a bowl while the chicken bakes.
  7. Remove your dish from the oven and let it rest for 5 minutes.
  8. Serve your chicken and rice with the yogurt sauce on top.

Notes

  • Use brown rice for your meal to get more fiber but increase the liquid and cooking time.
  • Squeeze the liquid out of your grated cucumber to prevent a watery sauce.
  • Add fresh spinach to your dish during the last 5 minutes of baking for extra greens.
