Ingredients

  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon bits
  • 1/4 cup sliced green onions
  • 1/2 cup sour cream

Instructions

  1. Heat your oven to 400 degrees.
  2. Scrub the potatoes and poke holes with a fork.
  3. Bake the potatoes for 60 minutes.
  4. Let the potatoes cool for 10 minutes.
  5. Cut potatoes in half lengthwise.
  6. Scoop out the inside and leave a thin shell.
  7. Brush skins with oil and salt.
  8. Bake skins for 10 minutes on each side.
  9. Fill the shells with cheese and bacon.
  10. Bake for 5 minutes until the cheese melts.
  11. Top with onions and sour cream.

Notes

  • Choose large potatoes for better shells.
  • Cook bacon until it is very crunchy.
