- 1 lb Shrimp (peeled/deveined)
- 1/2 cup Mayonnaise
- 1/4 cup Sweet Chili Sauce
- 1 tbsp Sriracha
- 3/4 cup Cornstarch
- 1/2 cup Buttermilk
Instructions
- Whisk mayo, sweet chili sauce, and Sriracha to make the sauce.
- Soak shrimp in buttermilk, then dredge in seasoned cornstarch.
- Fry in hot oil at 375°F for 2-3 minutes until crispy.
- Toss fried shrimp in the sauce.
- Serve over lettuce garnished with green onions.

- Cornstarch: Essential for a light, crispy coating. Do not use flour.
- Serving: Serve immediately to prevent sogginess.
